The 4-Minute Lunch

Hard to call this a recipe, but whatever it is it’s damned good. Around 400 calories, no fat, no cholesterol, and a truckload of fiber. Vegan, as far as I can tell.

Ingredients:

  • Uncle Ben’s Ready Rice - Whole Grain Brown
  • Pacific Natural Foods Spicy Black Bean Soup
  • 1 can of black beans

Throw the rice in the microwave and cook for 90 seconds…it cooks in the bag and is the easiest path to brown rice that I know of.

Split the rice into two bowls, and do the same with the beans. Put one of the bowls away.

Pour in enough soup to completely cover the rice and beans.

Microwave for around 90 seconds.

Enjoy.
